Tapioca with Rhubarb
Easy and Original Dessert
Ingredients:
- 1/2 cup tapioca pearls
- 4 cups water
- 1/2 cup sugar
- 2 cups chopped rhubarb
- 1/2 cup heavy cream
- 1 teaspoon vanilla essence
Instructions:
- Soak tapioca pearls in 2 cups of water for at least 30 minutes. Drain the water and rinse the pearls.
- In a saucepan, boil 4 cups of water and stir in the soaked tapioca pearls. Cook the pearls on medium heat until they turn translucent and tender. This should take about 15-20 minutes. Stir occasionally to avoid sticking.
- Add sugar and chopped rhubarb to the tapioca pearls and cook on low heat for another 10 minutes until the rhubarb turns tender. Stir occasionally.
- In a separate bowl, whisk together heavy cream and vanilla essence until soft peaks form.
- Remove the tapioca and rhubarb mixture from heat and let it cool for a few minutes.
- Serve the tapioca and rhubarb mixture topped with a dollop of whipped cream.
