Tarragon Snow Eggs

Ingredients:

  • 4 large eggs
  • 1 tablespoon white vinegar
  • 2 tablespoons chopped fresh tarragon
  • 1 tablespoon unsalted butter
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. Separate egg whites and egg yolks in 2 different bowls.
  2. Add white vinegar to egg whites. Using a whisk, beat the egg whites until they form stiff peaks and set them aside.
  3. In another bowl, whisk egg yolks and tarragon together until well blended.
