Ingredients

  • 1 sheet puff pastry, thawed
  • 1/2 cup granulated sugar
  • 2 tablespoons cold unsalted butter, cut into small pieces
  • 1/4 teaspoon fine sea salt
  • 2 pints multicolored cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons honey
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the puff pastry to a round that is slightly larger than the skillet you will be using for the tart.
  3. In a 10-inch oven-safe skillet, sprinkle the sugar in an even layer and add the butter pieces and salt.
  4. Cook over medium heat until the mixture is melted and begins to bubble.
  5. Add the halved multicolored cherry tomatoes in a single layer, cut side down.
  6. Drizzle the olive oil, balsamic vinegar and honey over the tomatoes and sprinkle with black pepper. Stir gently to coat the tomatoes.
  7. Arrange the puff pastry over the tomatoes and tuck in the edges around the edges of the skillet.
  8. Bake for 25-30 minutes, until the pastry is golden brown and puffed.
  9. Remove from the oven and let cool for 5 minutes.
  10. Place a serving plate over the skillet and carefully invert the tart. The tomatoes should be on top and the pastry should form the base of the tart.
  11. Let cool for a few minutes before serving warm or at room temperature.
