Tartlet with three lemons – Delicious

Tartlet with Three Lemons Recipe

Ingredients:

  • For the tartlet crust:
    • 1 and 1/2 cups all-purpose flour
    • 1/2 cup unsalted butter, chilled and cubed
    • 1/4 cup granulated sugar
    • 1/4 teaspoon salt
    • 1 large egg yolk
    • 2-3 tablespoons ice water

  • For the lemon filling:
    • 3 large eggs
    • 3/4 cup granulated sugar
    • 1/3 cup freshly squeezed lemon juice
    • 1 tablespoon lemon zest
    • 1/2 cup unsalted butter, melted and cooled

  • For the whipped cream and garnish:
    • 1 cup heavy whipping cream
    • 2 tablespoons powdered sugar
    • Zest from 1 lemon
    • Thin lemon slices for garnish

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, and salt for the crust.
  2. Add in the chilled cubed butter and mix with a pastry cutter or with your hands, until the mixture resembles coarse crumbs.
  3. Add in the egg yolk and ice water, a tablespoon at a time, until the dough comes together and forms a ball. Do not overwork the dough.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C) and lightly butter a 9-inch tartlet pan.
  6. Roll out the chilled dough on a lightly floured surface and transfer it to the prepared tartlet pan. Press the dough firmly into the bottom and sides of the pan, trimming off any excess with a knife.
  7. Prick the bottom of the crust with a fork and bake for 15-18 minutes, or until lightly golden brown. Remove from the oven and let cool completely.
  8. While the crust is cooling, whisk together the eggs, sugar, lemon juice, and lemon zest for the filling in a medium mixing bowl.
  9. Gradually mix in the melted and cooled butter until well combined.
  10. Pour the lemon filling into the cooled tartlet shell and smooth out the top with a spatula.
  11. Bake the tartlet for 20-25 minutes, or until the filling is set and lightly golden brown. Remove from the oven and let cool completely.
  12. Whisk together the heavy cream and powdered sugar in a medium mixing bowl until stiff peaks form.
  13. Spoon the whipped cream onto the cooled tartlet and sprinkle the lemon zest on top.
  14. Garnish with thin lemon slices and serve.
