Tartlets with Sugar and Candied Lemons

Ingredients:

  • 1 sheet puff pastry, thawed
  • 1 cup granulated sugar
  • 1/2 cup water
  • 2 lemons, sliced into thin rounds
  • 1/4 cup powdered sugar

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut into 12 circles using a biscuit cutter or cookie cutter. Press each circle into the cups of a muffin tin and prick the bottoms with a fork.
  3. Bake the tartlet shells for 12-15 minutes or until they are golden brown. Remove from the oven and allow to cool.
  4. In a small saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar has dissolved, then add the slices of lemon.
  5. Simmer the lemon slices in the sugar syrup for 15 minutes or until they become translucent. Remove the lemon slices from the syrup and drain them on a wire rack.
  6. Place one or two candied lemon slices into each tartlet shell.
  7. Sift powdered sugar over the top of each tartlet and serve.
