Tempura Land and Sea – Delight Recipe

Ingredients

  • 1/2 lb boneless chicken breast
  • 1/2 lb large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1 egg
  • 1/2 cup cold water
  • Ice cubes
  • Oil for frying

Instructions

  1. Cut chicken into bite-size pieces and season with salt and pepper. Set aside.
  2. Pat dry the shrimp with paper towel and season with salt and pepper. Set aside.
  3. Make the batter by combining flour, cornstarch, baking powder, and salt in a mixing bowl.
  4. Add the egg and cold water and mix until the batter is smooth.
  5. Add a few ice cubes into the batter and mix well. The batter should be very cold.
  6. Heat oil in a deep fryer or a large pot to 350°F.
  7. Dip the chicken and shrimp in the batter and let the excess drip off.
  8. Fry the chicken and shrimp in the hot oil until golden brown and cooked through, about 2-3 minutes. Work in batches and do not overcrowd the fryer/pot.
  9. Remove the cooked chicken and shrimp with a slotted spoon and drain on paper towel.
  10. Serve immediately with your favorite dipping sauce (e.g. sweet and sour sauce, soy sauce, or tempura sauce).
