The Real Scotch Egg – Delight Recipe
Ingredients:
- 4 large eggs, hard boiled and peeled
- 1 lb of pork sausage meat or ground pork
- 1 cup of all-purpose flour
- 2 cups of fine breadcrumbs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- Vegetable oil, for frying
Instructions:
- Preheat the oven to 350°F. Spread the breadcrumbs onto a baking sheet and bake for 5-7 minutes until they are lightly browned, let them cool.
- In a mixing bowl, combine sausage meat or pork mince with salt, pepper, and paprika. Mix well until the spices are fully incorporated.
- Flatten one-quarter of the sausage meat in the palm of your hand, shaping it to fit around the hard-boiled egg and forming a ball. Repeat with the remaining eggs and sausage mixture.
- Roll each sausage-meat coated egg in flour, then coat it in the breadcrumbs, making sure they are fully covered.
- Fill a Dutch oven or large pot with about 2 inches of vegetable oil and heat over medium-high heat. Once the oil has reached 375°F, add the sausage-wrapped eggs and cook for about 5-6 minutes or until the crust is golden brown and crispy.
- Remove the eggs and place them on a paper towel to blot off any excess oil.
- Let the eggs cool down for a while before serving, but serve while they are still warm with mustard, ketchup or mayonnaise.
