Thin Tartlets with Pig’s Feet Recipe

Ingredients

  • 1 pig’s foot
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • Salt and pepper to taste
  • 1 egg yolk
  • 1/4 cup water

Instructions

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  2. Clean and wash the pig’s foot and remove any hairs on it. Boil it in water for 2 hours, or until tender.
  3. Once done, remove the pig’s foot from the water and let it cool. Dice it into small pieces and set aside.
  4. In a large bowl, sift together the flour and a pinch of salt. Add the diced butter and rub it into the flour mixture until it resembles breadcrumbs.
  5. In another small bowl, whisk the egg yolk and water together.

  8. Place the circles on the lined baking sheet and prick the pastry dough with a fork.
  9. Fill each circle with a spoonful of the pig’s feet mixture.
  10. Bake in the preheated oven for around 15 minutes or until the crust is golden brown.
  11. Remove from the oven and let cool before serving.
