Thin Tomato Tart

Ingredients

  • 1 ready-to-bake pie crust
  • 2 medium-sized tomatoes, sliced thinly
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Unroll the pie crust and press it into the bottom of a 9-inch tart pan, trimming any excess crust.
  3. Arrange the tomato slices on top of the crust, slightly overlapping each other.
  4. Sprinkle the crumbled feta cheese on top of the tomatoes.
  5. Combine the fresh basil, olive oil, minced garlic, salt, and pepper in a small bowl. Drizzle the mixture over the top of the tart.
  6. Bake for 25-30 minutes or until the crust is golden brown and the tomatoes are slightly shriveled.
  7. Allow to cool for a few minutes before slicing and serving.
