Tiered Carrot Cake Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 1/2 cups vegetable oil
  • 1 tsp pure vanilla extract
  • 3 cups grated carrots (about 6 medium)
  • 1 cup chopped pecans, toasted (optional)

Cream Cheese Frosting:

  • 2 (8 oz) packages cream cheese, at room temperature
  • 1/2 cup unsalted butter, at room temperature
  • 4 cups confectioners’ sugar, sifted
  • 1 tsp pure vanilla extract

Directions:

  1. Preheat oven to 350°F (180°C). Grease and flour three 9-inch cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In a large bowl, whisk together eggs, granulated and brown sugars, oil, and vanilla extract.
  4. Add the flour mixture to the egg mixture and whisk until just combined.
  5. Stir in grated carrots and pecans (if using).
  6. Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  9. For the frosting, beat cream cheese and butter together in a large bowl until smooth.
  10. Add confectioners’ sugar and vanilla extract, and beat until smooth and creamy.
  11. Place one cake layer on a cake plate and spread a layer of frosting over the top.
  12. Repeat with the remaining layers, adding more frosting between each layer.
  13. Spread a thin layer of frosting all over the cake, then refrigerate for 30 minutes to set.
  14. Remove from the refrigerator and spread another layer of frosting all over the cake.
  15. Decorate the cake as desired. (Optional: Use a piping bag fitted with a star tip to pipe rosettes along the top and bottom edges of the cake.)
  16. Refrigerate the cake until ready to serve.
