Tiramisu-style log: chef’s recipe

Ingredients:

  • 500g mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup strong espresso, cooled
  • 2 tbsp rum
  • 24 ladyfingers
  • Cocoa powder, for dusting

Instructions:

  1. In a mixing bowl, beat the mascarpone cheese until creamy and smooth.
  2. Gradually add in the heavy cream, sugar, and vanilla extract while continuing to beat the mixture until well combined and fluffy.
  3. In a separate bowl, combine the cooled espresso with the rum.
  4. Dip the ladyfingers in the espresso-rum mixture, a few at a time, and arrange them in a single layer at the bottom of a baking dish or tray. Spread half of the mascarpone mixture on top.
  5. Arrange another layer of soaked ladyfingers and spread the remaining mascarpone mixture on top.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
  7. Before serving, dust the top with cocoa powder.
