Tomato, Ginger and Thyme Tatin

Ingredients:

  • 6-8 ripe tomatoes, cut in half
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp grated ginger
  • 1 tbsp chopped thyme leaves
  • 1 sheet puff pastry, thawed
  • 1 tbsp butter
  • 2 tbsp brown sugar
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F. Arrange the tomatoes, cut side up, in a baking dish and drizzle with olive oil and balsamic vinegar. Sprinkle with ginger, thyme, salt, and pepper. Roast in the oven for 20-25 minutes, until the tomatoes are soft and slightly caramelized.
  2. Roll out the puff pastry on a lightly floured surface to a size that matches the size of the baking dish. Chill in the refrigerator while the tomatoes roast.
  3. Melt the butter and brown sugar together in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture thickens, for about 2-3 minutes.
  4. Pour the caramelized mixture into the bottom of the baking dish. Arrange the roasted tomatoes on top of the mixture, cut side down. Place the pastry sheet on top of the tomatoes, tucking it around the edges of the dish.
  5. Bake for 25-30 minutes, until the pastry is golden brown and puffed up. Remove from the oven and allow the tart to cool in the dish for 5 minutes before inverting it onto a plate.
  6. Serve the tart warm, garnished with additional thyme leaves if desired.
