Tomato Pesto

Ingredients:

  • 2 cups packed fresh basil leaves
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup pine nuts
  • 2 large garlic cloves
  • 1/2 cup freshly grated Parmigiano-Reggiano cheese
  • 2 medium-sized ripe tomatoes
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Cut the tomatoes into halves and season them with salt and pepper. Drizzle some olive oil over the tomato halves.
  3. Roast the tomato halves in the oven for 15 to 20 minutes until the skin starts to brown and wrinkle.
