Chef’s Recipe

Ingredients:

  • 4 large tomatoes
  • 1 small red onion, finely chopped
  • 2 tablespoons capers, drained
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions:

  1. Remove the stems from the tomatoes and chop them finely.
  2. Place the chopped tomatoes in a bowl and add the chopped red onion, capers, olive oil, balsamic vinegar, salt, and black pepper.
  3. Using a spoon or a spatula, gently mix the ingredients together until well combined.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
  5. To serve, spoon the tomato tartare onto plates and garnish with the chopped parsley.
