Torta all’Amaretto Recipe

Ingredients:

  • 200g Amaretti biscuits
  • 100g butter
  • 250g ricotta cheese
  • 3 eggs (separated)
  • 50g caster sugar
  • 50g plain flour
  • 1 lemon (zest only)
  • 1tsp vanilla extract
  • Icing sugar (for dusting)

Instructions:

  1. Preheat the oven to 180°C.
  2. Crush the Amaretti biscuits in a blender or with a rolling pin until they resemble breadcrumbs.
  3. Melt the butter in a small saucepan and add the biscuits. Mix well.
  4. Press the biscuit mixture into the bottom of a 20cm springform tin, flattening it down with your hands or the back of a spoon. Chill for 10 minutes in the fridge.
  5. In a mixing bowl, combine the ricotta cheese, egg yolks, caster sugar, lemon zest and vanilla extract and whisk until smooth.
  6. In a separate bowl, whisk the egg whites until they form stiff peaks.
  7. Fold the flour into the ricotta mixture, then gently fold in the whisked egg whites.
  8. Pour the mixture over the chilled biscuit base, smoothing the top with a spatula.
  9. Bake for 30-35 minutes or until a skewer inserted in the middle of the torta comes out clean.
  10. Let the torta cool to room temperature before removing it from the tin and placing it on a serving plate.
  11. Dust the top of the torta with icing sugar and serve.
