Torta all’Amaretto Recipe
Ingredients:
- 200g Amaretti biscuits
- 100g butter
- 250g ricotta cheese
- 3 eggs (separated)
- 50g caster sugar
- 50g plain flour
- 1 lemon (zest only)
- 1tsp vanilla extract
- Icing sugar (for dusting)
Instructions:
- Preheat the oven to 180°C.
- Crush the Amaretti biscuits in a blender or with a rolling pin until they resemble breadcrumbs.
- Melt the butter in a small saucepan and add the biscuits. Mix well.
- Press the biscuit mixture into the bottom of a 20cm springform tin, flattening it down with your hands or the back of a spoon. Chill for 10 minutes in the fridge.

- Pour the mixture over the chilled biscuit base, smoothing the top with a spatula.
- Bake for 30-35 minutes or until a skewer inserted in the middle of the torta comes out clean.
- Let the torta cool to room temperature before removing it from the tin and placing it on a serving plate.
- Dust the top of the torta with icing sugar and serve.
