Torta Caprese Recipe
Ingredients:
- 200g dark chocolate, roughly chopped
- 200g unsalted butter, chopped into pieces
- 200g almond meal
- 200g caster sugar
- 4 large eggs, lightly beaten
- 1 tsp vanilla extract
- Icing sugar, to dust
Instructions:
- Preheat your oven to 180°C (160°C fan-forced) and line the base of a 20cm round cake tin with baking paper.
- Melt the butter and chocolate in a microwave safe bowl, stirring in 30-second intervals until smooth.
- Add the almond meal, caster sugar, eggs and vanilla extract and mix until well combined.
- Pour the mixture into the prepared cake tin and smooth the surface with a spatula.
- Bake for 45-50 minutes or until a skewer inserted into the centre of the cake comes out clean.
- Allow the cake to cool completely in the tin before removing it and placing it onto a serving plate.
- Dust the top of the cake with icing sugar before serving.
