Torta di Ricotta Recipe

Ingredients

  • 500g of ricotta cheese
  • 1/2 cup of sugar
  • 3 eggs
  • 1/2 cup of flour
  • 1/2 lemon rind, grated
  • 1/4 teaspoon of salt
  • Icing sugar (optional)
  • Thinly sliced almonds (optional)

Instructions

  1. Preheat the oven to 180C (160C fan)
  2. Butter a 23 cm springform pan and dust it with flour.
  3. In a large bowl, mix together the ricotta cheese, sugar, eggs, flour, lemon rind, and salt until smooth.
  4. Pour the mixture into the prepared pan.
  5. Bake for 45 minutes until golden brown.
  6. Let the torta cool down completely. The cake will deflate slightly after it cools down.
  7. Slice and sift over icing sugar and sprinkle some sliced almonds if you like.
  8. Serve and enjoy!
