Traditional Floating Island Recipe

Ingredients:

  • 1 liter of whole milk
  • 6 eggs
  • 150g of sugar
  • 1 teaspoon of vanilla extract
  • Pinch of salt
  • 1 tablespoon of cornflour

Instructions:

  1. In a large saucepan, heat the milk on medium-high heat. Do not boil the milk. Add vanilla extract and a pinch of salt into the milk.
  2. In a bowl, separate the egg yolks from the whites. Whisk the egg yolks with 100g of sugar until creamy.
  3. Next, add one tablespoon of cornflour into the egg yolks and mix well.
  4. Pour the egg yolk mixture into the warm milk and mix until it becomes a thick and creamy custard. Set aside.
  5. In another bowl, whisk the egg whites with a pinch of salt until soft peaks form.
  6. Add the remaining 50g of sugar and continue to whisk until stiff peaks form.
  7. Put some of the custard in a bowl or ramekin. Using two spoons, make oval-shaped dumplings with the meringue mixture, and place it on top of the custard.
  8. Repeat this process until all the meringue mixture is used up. Make sure to leave a gap between each dumpling.
  9. Once all the dumplings are made, place the bowl or ramekin in the fridge to cool for at least 1 hour.
  10. Garnish with some crushed nuts, caramel sauce, or fresh fruit.
  11. Serve chilled.
