Traditional Lyonnais Bugnes Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • vegetable oil, for frying
  • powdered sugar, for dusting

Directions:

  1. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  2. Add in the softened butter, and mix until the flour mixture appears crumbly.
  3. In a separate mixing bowl, whisk together the eggs, milk, and orange zest.
  4. Pour the egg mixture over the flour mixture, and stir until a dough forms. Use your hands to mix everything together if necessary.
  5. Transfer the dough onto a floured surface. Roll it out to about 1/8-inch thickness.
  6. Using a sharp knife or a pastry cutter, cut the dough into diamond shapes or strips.
  7. In a large skillet or pot, heat up the vegetable oil to 350°F.
  8. Carefully place the diamond-shaped dough into the hot oil, a few at a time, and fry until golden brown on both sides. This should take about 1-2 minutes per side.
  9. Use a slotted spoon to remove the fried bugnes from the oil, and transfer them onto a plate lined with paper towels to absorb any excess oil. Repeat until all the dough is fried.
  10. Dust generously with powdered sugar before serving.
