Traditional Lyonnais Bugnes Recipe
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1/4 cup milk
- 2 large eggs
- 1 tablespoon orange zest
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- vegetable oil, for frying
- powdered sugar, for dusting
Directions:
- In a large mixing bowl, combine flour, sugar, baking powder, and salt.
- Add in the softened butter, and mix until the flour mixture appears crumbly.
- In a separate mixing bowl, whisk together the eggs, milk, and orange zest.
- Pour the egg mixture over the flour mixture, and stir until a dough forms. Use your hands to mix everything together if necessary.
- Transfer the dough onto a floured surface. Roll it out to about 1/8-inch thickness.
- Using a sharp knife or a pastry cutter, cut the dough into diamond shapes or strips.
- In a large skillet or pot, heat up the vegetable oil to 350°F.
- Carefully place the diamond-shaped dough into the hot oil, a few at a time, and fry until golden brown on both sides. This should take about 1-2 minutes per side.
- Use a slotted spoon to remove the fried bugnes from the oil, and transfer them onto a plate lined with paper towels to absorb any excess oil. Repeat until all the dough is fried.
- Dust generously with powdered sugar before serving.
Verdict:
These traditional Lyonnais bugnes are simply delicious! Fried to golden perfection, these crispy diamond-shaped doughs have a slight hint of orange zest and are generously coated with powdered sugar. A perfect treat to enjoy with a cup of coffee or tea!
