Ingredients:
- 8 oz. dried rice noodles
- 2 tbsp vegetable oil
- 4 garlic cloves, minced
- 2 shallots, diced
- 2-3 red chilies, sliced
- 8-10 large shrimp, peeled and deveined
- 1 egg, beaten
- 2 cups bean sprouts
- 2 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1/4 cup roasted peanuts, chopped
- 1 lime, quartered
Instructions:
- Soak the rice noodles in cold water for at least 30 minutes.
- In a wok or large frying pan, heat the oil over high heat and sauté garlic, shallots, and chilies until fragrant.
- Add the shrimp and cook until just pink. Push the shrimp to one side of the wok or pan and add the beaten egg.
- Scramble the egg until partially set, then mix with the shrimp mixture.
- Add the soaked noodles to the wok or pan, followed by the bean sprouts, tamarind paste, fish sauce, and sugar. Stir-fry for 2-3 minutes, until the noodles are cooked and the bean sprouts are slightly wilted.
- Transfer the pad thai to a serving plate and top with chopped peanuts. Serve with lime wedges on the side.
