Traditional Pad Thai Recipe

Ingredients:

  • 8 oz. dried rice noodles
  • 2 tbsp vegetable oil
  • 4 garlic cloves, minced
  • 2 shallots, diced
  • 2-3 red chilies, sliced
  • 8-10 large shrimp, peeled and deveined
  • 1 egg, beaten
  • 2 cups bean sprouts
  • 2 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1/4 cup roasted peanuts, chopped
  • 1 lime, quartered

Instructions:

  1. Soak the rice noodles in cold water for at least 30 minutes.
  2. In a wok or large frying pan, heat the oil over high heat and sauté garlic, shallots, and chilies until fragrant.
  3. Add the shrimp and cook until just pink. Push the shrimp to one side of the wok or pan and add the beaten egg.
  4. Scramble the egg until partially set, then mix with the shrimp mixture.
  5. Add the soaked noodles to the wok or pan, followed by the bean sprouts, tamarind paste, fish sauce, and sugar. Stir-fry for 2-3 minutes, until the noodles are cooked and the bean sprouts are slightly wilted.
  6. Transfer the pad thai to a serving plate and top with chopped peanuts. Serve with lime wedges on the side.
