Traditional Schankala Donuts

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 1 large egg
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 cups vegetable oil, for frying
  • Powdered sugar, for dusting

Directions:

  1. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  2. In a large bowl, beat together sugar and butter until light and fluffy.
  3. Add egg, milk, and vanilla extract to the sugar mixture and mix until well combined.
  4. Gradually add the flour mixture to the sugar mixture, stirring until just combined. Do not overmix.
  5. On a lightly floured surface, roll the dough out to 1/4-inch thickness.
  6. Cut the dough into small circles using a 1-2 inch cookie cutter.
  7. In a large saucepan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F.
  8. Carefully drop the dough circles into the hot oil and fry until golden brown and puffed up, about 2-3 minutes per side.
  9. Using a slotted spoon, transfer the donuts to a paper towel-lined plate to cool.
  10. Dust with powdered sugar before serving.
