Ingredients

  • 1 1/4 cups all-purpose flour

  • 2 pounds fresh strawberries, hulled and sliced in half

  • 2 tablespoons cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the flour and salt. Add the diced butter and mix until the mixture resembles coarse crumbs.
  3. Add the ice water, one tablespoon at a time, and mix until the dough comes together. Form into a ball, wrap in plastic wrap, and chill for at least 30 minutes.
  4. In a separate bowl, mix the strawberries, sugar, cornstarch, cinnamon, and vanilla extract.
  5. Roll out the chilled dough on a floured surface until it is about 1/8 inch thick. Cut into rounds using a biscuit cutter or a glass. Place the rounds on a baking sheet lined with parchment paper.
  6. Spoon a heaping tablespoon of the strawberry mixture onto each pastry round. Fold the edges of the pastry over the filling, leaving the center open.
  7. Brush the pastry with the beaten egg.
