Trifle Yoghurt, Cherries and Speculoos

Ingredients:

  • 500g Greek yoghurt
  • 1 cup of cherries, pitted and halved
  • 200g of speculoos cookies, crushed
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract

Directions:

  1. In a mixing bowl, combine the yoghurt, maple syrup or honey, and vanilla extract. Mix well until all the ingredients are well combined.
  2. Add the crushed speculoos cookies to the bowl, and stir thoroughly to combine.
  3. Take a glass container or a trifle bowl, and spread a layer of the yoghurt mixture on the bottom of the container.
  4. Add a layer of cherries on top of the yoghurt mixture.
  5. Repeat step 3 and 4 again, making sure to end with a layer of the yoghurt mixture on top.
  6. Use a spoon to smooth out the top layer of yoghurt mixture, and sprinkle a few cherries and crushed speculoos cookies on top of it for decoration.
  7. Refrigerate the trifle for at least three hours or overnight before serving.

    This trifle is a deliciously indulgent dessert that is perfect for any occasion. The tang of the yoghurt is balanced beautifully by the sweetness of the cherries and the biscuity texture of the speculoos cookies.
