Tropezian Tart: Traditional Recipe

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 cup almond meal
  • 1/3 cup orange blossom honey
  • 1/4 cup whipping cream
  • 1/4 cup unsalted butter, cold
  • 1/2 cup sliced almonds

Instructions:

  1. Preheat oven to 350°F.
  2. In a mixing bowl, whisk together flour, cornstarch, and salt; set aside.
  3. In another mixing bowl using an electric mixer, beat butter and sugar until pale and fluffy. Add egg and mix well.
  4. Add dry ingredients to butter mixture and mix until just combined. Add almond meal and mix well.
  5. Grease a 9-inch tart pan with removable bottom and press dough evenly onto the bottom and sides. Chill for at least 15 minutes.
  6. Bake tart shell for 18 to 20 minutes or until golden. Let cool to room temperature.
  7. In a saucepan, combine honey and whipping cream over medium heat. Bring to a boil then remove from heat.
  8. Cut cold butter into small cubes. Pour hot honey mixture over butter and whisk until smooth. Pour filling into cooled tart shell.
  9. Sprinkle sliced almonds over filling. Bake for 18 to 20 minutes or until filling is set and almonds are golden.
  10. Let cool to room temperature before serving. Store leftovers in the fridge for up to 3 days.
