Unstructured Mango-Passion Fruit Meringue

Ingredients:

  • 4 egg whites
  • 1 cup sugar
  • 1/4 tsp cream of tartar
  • 1 mango, peeled and chopped
  • 3 passion fruits, pulp scooped out

Instructions:

  1. Preheat the oven to 275°F.
  2. In a large mixing bowl, combine egg whites and cream of tartar. Using an electric mixer, beat on high speed until soft peaks form.
  3. Gradually add sugar, one tablespoon at a time, while continuing to beat until stiff peaks form and mixture is glossy.
  4. Line a baking sheet with parchment paper. Spoon the meringue onto the parchment paper, creating a large, unstructured blob.
  5. Bake in the preheated oven for 1-1/2 to 2 hours, or until the meringue is dry and crisp on the outside but still chewy in the center.
