Vanilla, Chestnut and Mikado Log Recipe

Ingredients:

  • 1 vanilla sponge cake
  • 200g chestnut puree
  • 300ml double cream
  • 100g icing sugar
  • 1 pack of Mikado chocolate sticks
  • 50g melted chocolate

Instructions:

  1. Whip the double cream and icing sugar together until stiff peaks form.
  2. Spread the chestnut puree onto the vanilla sponge cake evenly.
  3. Spread the whipped cream on top of the chestnut puree evenly.
  4. Starting at one end, roll up the sponge cake tightly to create the log.
  5. Melt the chocolate in a microwave-safe bowl for 30 seconds at a time until completely melted.
  6. Use a spoon to drizzle the melted chocolate over the top of the vanilla, chestnut and Mikado log.
  7. Break the Mikado chocolate sticks into small pieces and sprinkle on top of the melted chocolate.
  8. Refrigerate for at least 2 hours before serving.
