Vanilla Cream with Apricot Crumble Recipe

Ingredients:

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 4 egg yolks
  • 1/3 cup granulated sugar
  • 1 vanilla bean, split and scraped
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, chilled and cubed
  • 1/4 cup chopped dried apricots

Instructions:

  1. In a medium saucepan, heat the cream, milk, and vanilla bean scrapings over medium heat until bubbles start to form around the edges.
  2. In a medium bowl, whisk together the egg yolks and 1/3 cup granulated sugar. Slowly pour about half of the hot cream mixture into the yolk mixture while whisking constantly. Pour the egg mixture back into the saucepan with the remaining cream mixture and heat over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes.
  3. Remove the vanilla bean and pour the cream mixture into a bowl. Cover with plastic wrap, pressing it against the surface of the cream to prevent a skin from forming, and refrigerate until chilled, about 2 hours.
  4. Once the cream is chilled, preheat your oven to 375°F. In a bowl, whisk together the flour and sugar. Add the chilled butter and rub it into the flour mixture with your fingertips until it resembles coarse crumbs. Stir in the chopped apricots.
  5. Spread the crumble mixture evenly onto a baking sheet lined with parchment paper. Bake for 10-12 minutes, or until the crumble is golden brown and fragrant. Remove from the oven and let cool.
  6. To serve, spoon the chilled vanilla cream into bowls. Top with the apricot crumble.

Verdict:

This vanilla cream with apricot crumble is a delightful dessert that combines the creamy sweetness of the vanilla cream with the nutty crunch of the apricot crumble. It’s a perfect ending to any meal, and it’s easy to make!
