Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup whole milk

Instructions

  1. Preheat oven to 350°F (180°C). Line a muffin pan with cupcake liners.
  2. In a medium-sized bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat softened butter on medium speed until creamy.
  4. Add granulated sugar to the butter mixture and beat until light and fluffy (about 3 minutes).
  5. Beat in eggs, one at a time, making sure to mix well after each egg.
  6. Mix in vanilla extract.
  7. Slowly mix dry ingredients into the wet ingredients, alternating with milk, beginning and ending with dry ingredients.
  8. Spoon batter into lined muffin pan, filling each cupcake liner 2/3 full.
  9. Bake for 18-20 minutes, or until a toothpick or cake tester inserted in the center comes out clean.
  10. Remove cupcakes from muffin pan and allow them to cool completely on a wire rack.
