Vanilla Orange Gratin with Brioche Recipe

Ingredients:

  • 4 oranges, peeled and cut into segments
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split and scraped
  • 6 egg yolks
  • 1/2 tsp cornstarch
  • 1/2 cup heavy cream
  • 4 slices brioche bread, toasted and cubed
  • 1/4 cup powdered sugar

Instructions:

  1. Preheat your oven to 350°F (180°C).
  2. In a medium-sized bowl, combine the peeled and segmented oranges with 1/4 cup of the granulated sugar. Set aside.
  3. In a large bowl, whisk together the remaining 1/4 cup of granulated sugar, vanilla bean and its seeds, egg yolks, cornstarch, and heavy cream until smooth and fully combined.
  4. Arrange the cubed brioche bread in a single layer in the bottom of a gratin dish or baking dish.
  5. Arrange the orange segments over the top of the bread in an even layer.
  6. Pour the egg and cream mixture over the top of the oranges and bread.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the mixture has set.
  8. Remove from the oven and let cool for a few minutes before dusting with powdered sugar.
  9. Serve warm or at room temperature.
