Vanilla Pastry Flan Recipe

Ingredients

  • 1 pre-made pastry shell
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3 egg yolks
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a saucepan, combine the heavy cream and whole milk. Heat the mixture over medium heat until it starts to steam, then remove it from the heat.
  3. In a separate bowl, whisk together the egg yolks and sugar until light and fluffy. Pour about 1/2 cup of the heated cream mixture into the egg mixture, whisking constantly to temper the eggs.
  4. Once the eggs are tempered, pour the egg mixture back into the saucepan with the remaining cream mixture.
  5. Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 10-15 minutes).
  6. Remove the pan from heat and stir in the vanilla extract.
  7. Let the mixture cool slightly, then pour it into the pre-made pastry shell.
  8. Bake the flan in the oven for 35-40 minutes, or until the center is set.
  9. Remove the flan from the oven, and let it cool to room temperature before serving.

Serving suggestions

For an added touch of sweetness, dust the top of the flan with powdered sugar before serving. This vanilla pastry flan goes great with a cup of coffee or tea as an after-dinner dessert.
