Ingredients

  • 2 ripe avocados, halved and pitted
  • 2 tablespoons melted butter
  • 1 vanilla bean, split and scraped
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt to taste
  • Pepper to taste
  • For the vinaigrette:
  • ¼ cup freshly squeezed lime juice
  • 2 tablespoons honey
  • 2 teaspoons Dijon mustard

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Line a baking sheet with parchment paper.
  3. Remove the flesh of the avocado halves, keeping them intact, and cube the flesh into large pieces.
  4. In a small bowl, whisk together the melted butter, vanilla bean and the scraped seeds.
  5. Pour the mixture over the avocado, and toss well to coat evenly. Season with salt and pepper to taste.
  6. Spread the avocado pieces out onto the prepared baking sheet, making sure they are not touching.
