Ingredients

  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split lengthwise and scraped

  • 1/4 cup cold water
  • 2 1/2 teaspoons unflavored gelatin

Instructions

  1. In a medium saucepan, combine the heavy cream, milk, and granulated sugar. Heat over medium heat, stirring constantly, until the sugar dissolves and the mixture begins to steam. Remove from the heat.
  2. Add the vanilla bean and its seeds to the pot and stir gently. Allow the mixture to cool to room temperature, about 30 minutes. Remove the vanilla bean and discard.
  3. In a small bowl, sprinkle the gelatin over the cold water. Let stand for 5 minutes to allow the gelatin to soften.
