Ingredients
- 1 lb spaghetti
- 1 small Onion finely chopped
- 2 garlic cloves, minced
- 2 tbsp Olive Oil
- 2 cups mixed vegetables (zucchini, bell peppers, broccoli, carrots), chopped into small pieces
- 1 cup tomato sauce
- 1 tsp. Salt
- 1/2 tsp. Black Pepper
- 1/4 tsp. red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to boil and cook spaghetti according to package instructions until al dente.
- In a separate large skillet, heat the olive oil over medium heat and add onion and garlic and cook for 2 to 3 minutes or until the onions become transparent.
- Add the mixed vegetables and sauté for 5 minutes or until they become soft.
- Stir in the tomato sauce, salt, black pepper and red pepper flakes (if using) in the skillet with the vegetables and mix well.
- Drain the cooked spaghetti and add it to the skillet with the tomato sauce and veggies. Gently toss until the spaghetti is coated with sauce and heated through, about 2-3 minutes.
- Remove the skillet from heat and serve hot.
