Ingredients

  • 1 lb spaghetti
  • 1 small Onion finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp Olive Oil
  • 2 cups mixed vegetables (zucchini, bell peppers, broccoli, carrots), chopped into small pieces
  • 1 cup tomato sauce
  • 1 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1/4 tsp. red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to boil and cook spaghetti according to package instructions until al dente.
  2. In a separate large skillet, heat the olive oil over medium heat and add onion and garlic and cook for 2 to 3 minutes or until the onions become transparent.
  3. Add the mixed vegetables and sauté for 5 minutes or until they become soft.
  4. Stir in the tomato sauce, salt, black pepper and red pepper flakes (if using) in the skillet with the vegetables and mix well.
  5. Drain the cooked spaghetti and add it to the skillet with the tomato sauce and veggies. Gently toss until the spaghetti is coated with sauce and heated through, about 2-3 minutes.
  6. Remove the skillet from heat and serve hot.
