Veggie Tartlets Recipe

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 1 cup mixed vegetables, finely chopped (e.g. bell pepper, onion, zucchini, carrot, mushroom, etc.)
  • 1/4 cup crumbled goat cheese or feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh parsley
