Vegetarian Makis: Easy Japanese Recipe

Ingredients:

  • 1 cup of sushi rice
  • 1 1/4 cups of water
  • 3 tablespoons of rice vinegar
  • 2 tablespoons of sugar
  • 1 teaspoon of salt
  • 4 sheets of nori
  • 1 ripe avocado, pitted and sliced
  • 1/2 cucumber, sliced into thin sticks
  • 1/2 carrot, sliced into thin sticks
  • Soy sauce and wasabi to serve

Instructions:

  1. Cook the sushi rice according to package instructions or in a rice cooker.
  2. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until the sugar dissolves.
  3. Transfer the cooked rice into a bowl and add the vinegar mixture. Stir well to combine.
  4. Place a sheet of nori on a bamboo mat or a piece of plastic wrap. Spread the rice onto the nori, leaving a 2cm border at the top and bottom.
  5. Arrange the sliced avocado, cucumber, and carrot on top of the rice.
  6. Roll up the mat tightly, using the border at the top to seal the roll.
  7. Repeat with the remaining nori sheets and ingredients.
  8. Using a sharp knife, cut the rolls into bite-sized pieces. Serve with soy sauce and wasabi.
