Ingredients:
- 1 cup of sushi rice
- 1 1/4 cups of water
- 3 tablespoons of rice vinegar
- 2 tablespoons of sugar
- 1 teaspoon of salt
- 4 sheets of nori
- 1 ripe avocado, pitted and sliced
- 1/2 cucumber, sliced into thin sticks
- 1/2 carrot, sliced into thin sticks
- Soy sauce and wasabi to serve
Instructions:
- Cook the sushi rice according to package instructions or in a rice cooker.
- In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until the sugar dissolves.
- Transfer the cooked rice into a bowl and add the vinegar mixture. Stir well to combine.
- Place a sheet of nori on a bamboo mat or a piece of plastic wrap. Spread the rice onto the nori, leaving a 2cm border at the top and bottom.
- Arrange the sliced avocado, cucumber, and carrot on top of the rice.
- Roll up the mat tightly, using the border at the top to seal the roll.
- Repeat with the remaining nori sheets and ingredients.
- Using a sharp knife, cut the rolls into bite-sized pieces. Serve with soy sauce and wasabi.
