Velouté of Green Vegetables
Ingredients:
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1 large zucchini, chopped
- 1 bunch asparagus, chopped
- 1 cup fresh spinach leaves
- 1/4 cup heavy cream
- Salt and Pepper to taste
- 1 tablespoon olive oil
Instructions:
- Heat olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté until softened and fragrant, about 3-5 minutes.
- Add broth, zucchini, asparagus and spinach to the saucepan. Bring the mixture to a boil and then reduce the heat to low. Cover the saucepan and allow the vegetables to cook for approximately 10-15 minutes.
- Remove the saucepan from heat and puree the vegetables in a blender until smooth. Be cautious if using a hot liquid blender.
- Return the puree to the saucepan and stir in the heavy cream. Season with salt and pepper to taste.
- Reheat the velouté gently over low heat and serve it hot.
Serving Suggestions:
- Serve with a salad or a crusty piece of bread.
- Garnish with a spoonful of freshly chopped herbs such as chives or parsley on top.
- Also can add toasted bread with chopped nuts on top for extra flavor and texture.
