Velouté of Green Vegetables

Ingredients:

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 large zucchini, chopped
  • 1 bunch asparagus, chopped
  • 1 cup fresh spinach leaves
  • 1/4 cup heavy cream
  • Salt and Pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Heat olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté until softened and fragrant, about 3-5 minutes.
  2. Add broth, zucchini, asparagus and spinach to the saucepan. Bring the mixture to a boil and then reduce the heat to low. Cover the saucepan and allow the vegetables to cook for approximately 10-15 minutes.
  3. Remove the saucepan from heat and puree the vegetables in a blender until smooth. Be cautious if using a hot liquid blender.
  4. Return the puree to the saucepan and stir in the heavy cream. Season with salt and pepper to taste.
  5. Reheat the velouté gently over low heat and serve it hot.

  • Serve with a salad or a crusty piece of bread.
  • Garnish with a spoonful of freshly chopped herbs such as chives or parsley on top.
