Recipe: Velouté of Split Peas
Ingredients:
- 1 pound dried split peas
- 1 medium onion, chopped
- 1 medium carrot, chopped
- 2 cloves garlic, minced
- 4 cups chicken stock
- 1 bay leaf
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter
- salt to taste
Instructions:
- Rinse and drain the split peas.
- In a large pot, sauté onion, carrot, and garlic in butter over medium heat until tender and lightly browned, stirring occasionally (about 5 to 7 minutes).
