Ingredients:

  • 1 lb. dried split peas
  • 8 cups chicken broth or water
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1/2 tsp. dried thyme
  • 4 strips bacon, chopped
  • 1/4 cup heavy cream
  • 2 tbsp. chopped fresh parsley
  • Salt and pepper, to taste

Instructions:

  1. Rinse the split peas and remove any debris or stones.
  2. In a large pot, combine the split peas, broth or water, onion, garlic, bay leaves, and thyme. Bring to a boil over high heat, then reduce the heat to low and simmer, stirring occasionally, for about 1 hour or until the peas are soft and falling apart.
