Velouté of Split Peas with Bacon Recipe
Ingredients:
- 1 lb. dried split peas
- 8 cups chicken broth or water
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1/2 tsp. dried thyme
- 4 strips bacon, chopped
- 1/4 cup heavy cream
- 2 tbsp. chopped fresh parsley
- Salt and pepper, to taste
Instructions:
- Rinse the split peas and remove any debris or stones.
- In a large pot, combine the split peas, broth or water, onion, garlic, bay leaves, and thyme. Bring to a boil over high heat, then reduce the heat to low and simmer, stirring occasionally, for about 1 hour or until the peas are soft and falling apart.
