Velouté of Zucchini and Peas with Mint
Ingredients:
- 2 medium-sized zucchinis, peeled and roughly chopped
- 1 cup of peas
- 3 cups of vegetable broth
- 1 large onion, finely chopped
- 2 tablespoons of butter
- 2 garlic cloves, finely minced
- 1/2 teaspoon of dried mint leaves
