Velouté of Zucchini and Peas with Mint

Ingredients:

  • 2 medium-sized zucchinis, peeled and roughly chopped
  • 1 cup of peas
  • 3 cups of vegetable broth
  • 1 large onion, finely chopped
  • 2 tablespoons of butter
  • 2 garlic cloves, finely minced
  • 1/2 teaspoon of dried mint leaves
  • 1/2 teaspoon of salt
