Verrines of Beans and Peas Recipe

Ingredients

  • 1 can of white beans, drained and rinsed
  • 1 cup of fresh shelled peas
  • 1 tablespoon of olive oil
  • 1 clove of garlic, minced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of lemon juice
  • 1/4 cup of crumbled feta cheese
  • 2 tablespoons of chopped fresh mint leaves

Instructions

  1. In a large pot of boiling salted water, cook the shelled peas for 2-3 minutes, until tender. Drain and rinse with cold water to stop the cooking process.
  2. In a saucepan, heat the olive oil over medium heat. Add the garlic and cook for 1 minute, until fragrant.
  3. Add the drained and rinsed white beans, salt, pepper, and lemon juice to the saucepan. Cook for 3-4 minutes, stirring occasionally until the beans are heated through.
  4. In a small bowl, mix together the crumbled feta cheese and chopped mint leaves.
  5. In small glasses or jars, layer the bean and pea mixture and feta/mint mixture alternately until you reach the top of the jar.
