Verrines of Cottage Cheese with Redcurrant and Cherry Coulis

Ingredients:

  • 400g cottage cheese
  • 50g caster sugar
  • 1 vanilla pod
  • 1 lemon zest
  • 200g redcurrants
  • 200g cherries
  • 1 tablespoon honey
  • 2 tablespoons water

Instructions:

  1. Start by making the coulis. Remove stalks from redcurrants and cherries, rinse and place in a small saucepan along with honey and water.
  2. Simmer for about 10 minutes, stirring occasionally until the fruits have broken down into a thick sauce.
  3. Remove from heat and set aside for later.
  4. Next, make the cottage cheese mixture. In a mixing bowl, add cottage cheese, caster sugar, scraped vanilla seeds, and lemon zest. Mix until combined.
  5. Spoon some of the redcurrant and cherry coulis into the bottom of a verrine glass.
  6. Add a spoonful of cottage cheese mixture on top of the coulis.
  7. Repeat layers of coulis and cottage cheese until the glass is full.
  8. Chill for at least 1 hour before serving.
