Vitello Tonnato Recipe – Regal

Ingredients:

  • 2 pounds of veal
  • 3 anchovy fillets
  • 2 tablespoons of capers, drained
  • 1/4 cup of mayonnaise
  • 1/4 cup of sour cream
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 350 degrees F.
  2. Season the veal with salt and pepper and rub it with olive oil.
  3. Place the veal on a roasting pan and roast it for about an hour or until it reaches an internal temperature of 160-165 degrees F.
  4. Remove the veal from the oven and let it cool completely.
  5. In a blender or food processor, combine the anchovy fillets, capers, mayonnaise, sour cream, olive oil, lemon juice, salt and pepper. Blend until smooth.
  6. Thinly slice the veal and arrange it on a serving platter.
  7. Pour the tonnato sauce over the veal and spread it evenly.
  8. Cover the platter with plastic wrap and refrigerate for at least 30 minutes before serving.
  9. Serve the Vitello Tonnato chilled.
