Warm Salmon Rolls and Mushroom Fricassee Recipe

Ingredients:

  • 8 oz. skinless salmon fillet
  • 1 tbsp Olive oil
  • 2 tbsp Butter
  • 1/2 Red onion, diced
  • 1 clove Garlic, minced
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 lb Mushrooms, sliced
  • 1/2 cup Chicken broth
  • 1/4 cup Heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 8 Dinner rolls, split and toasted
  • 1/4 cup Fresh parsley, chopped

Instructions:

  1. Preheat the oven to 350°F.
  2. Brush the salmon with olive oil and season with salt and pepper.
  3. Bake the salmon for 10-12 minutes or until cooked through.
  4. Remove the salmon from the oven and let it cool down.
  5. Using a fork, flake the salmon into small pieces and set aside.
  6. Heat butter in a large skillet over medium-high heat, add the onions and garlic and sauté until soft.
  7. Add the mushrooms to the skillet and cook until browned and tender.
  8. Pour in the chicken broth and cream and bring to a boil.
  9. Reduce the heat and let it simmer for 5-7 minutes.
  10. Add the grated parmesan cheese and stir until it is melted and combined.
  11. Remove from heat and stir in the flaked salmon.
  12. Arrange the toasted dinner rolls on a serving platter.
  13. Spoon the salmon and mushroom fricassee over the rolls.
  14. Garnish with chopped parsley and serve immediately.
