Warm Salmon Rolls and Mushroom Fricassee Recipe
Ingredients:
- 8 oz. skinless salmon fillet
- 1 tbsp Olive oil
- 2 tbsp Butter
- 1/2 Red onion, diced
- 1 clove Garlic, minced
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/2 lb Mushrooms, sliced
- 1/2 cup Chicken broth
- 1/4 cup Heavy cream
- 1/4 cup Parmesan cheese, grated
- 8 Dinner rolls, split and toasted
- 1/4 cup Fresh parsley, chopped
Instructions:
- Preheat the oven to 350°F.
- Brush the salmon with olive oil and season with salt and pepper.
- Bake the salmon for 10-12 minutes or until cooked through.
- Remove the salmon from the oven and let it cool down.
- Using a fork, flake the salmon into small pieces and set aside.
- Heat butter in a large skillet over medium-high heat, add the onions and garlic and sauté until soft.
- Add the mushrooms to the skillet and cook until browned and tender.
- Pour in the chicken broth and cream and bring to a boil.
- Reduce the heat and let it simmer for 5-7 minutes.
- Add the grated parmesan cheese and stir until it is melted and combined.
- Remove from heat and stir in the flaked salmon.
- Arrange the toasted dinner rolls on a serving platter.
- Spoon the salmon and mushroom fricassee over the rolls.
- Garnish with chopped parsley and serve immediately.
