Watermelon Granita

Ingredients

  • 4 cups cubed seedless watermelon
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 cup fresh lime juice
  • Zest of 1 lime

Instructions

  1. In a small saucepan, bring sugar and water to a boil. Stir until sugar is dissolved. Remove from heat and let cool.
  2. In a blender, puree watermelon and lime juice until smooth.
  3. Pour puree into a 9×13 inch glass baking dish.
  4. Stir in cooled sugar syrup and lime zest until well combined.
  5. Freeze mixture for 30 minutes.
  6. Using a fork, scrape icy edges towards the center of the dish.
  7. Repeat this process every 30 minutes for 3-4 hours, until the whole mixture is frozen and flaky.
