Waterzoi Recipe

Ingredients:

  • 1 whole chicken
  • 2 leeks, sliced
  • 4 carrots, sliced
  • 1 onion, chopped
  • 2 celery stalks, sliced
  • 1 bay leaf
  • 1 sprig of thyme
  • 4 egg yolks
  • 1 cup of cream
  • Salt and pepper to taste

Instructions:

  1. In a large pot, add the chicken, leeks, carrots, onion, celery, bay leaf, thyme, and enough water to cover the chicken.

  6. Slowly add 2 cups of the reserved broth to the egg mixture, whisking constantly.
  7. Return the mixture to the large pot and heat over low heat until the sauce is thickened, but not boiling.
  8. Add the chopped chicken to the pot and cook over low heat until it is heated through.
  9. Serve hot with crusty bread.
