Wild Berry Tiramisu Recipe

Ingredients:

  • 1 cup blackberries, fresh or frozen
  • 1 cup raspberries, fresh or frozen
  • 1 cup strawberries, fresh or frozen
  • 1/2 cup sugar
  • 1/4 cup water
  • 3 egg yolks
  • 1/2 cup sugar
  • 1/4 cup water
  • 8 oz mascarpone cheese, room temperature
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 24 ladyfingers
  • 1/2 cup strong coffee, cooled
  • 1/4 cup cocoa powder, for dusting

Instructions:

  1. In a medium saucepan, combine the blackberries, raspberries, strawberries, 1/2 cup sugar, and 1/4 cup water. Cook over medium heat until the berries are softened and the mixture is thickened, about 15 minutes. Remove from heat and let cool.
  2. In a bowl, whisk together the egg yolks and 1/2 cup sugar until thick and pale. In another small saucepan, heat 1/4 cup water until it comes to a simmer. Gradually whisk the hot water into the egg mixture until fully combined. Place the bowl over a small saucepan of simmering water and whisk constantly until the mixture becomes thick and light, about 5-7 minutes. Remove from heat and let cool.
  3. In a large bowl, beat together the mascarpone cheese, heavy cream, and vanilla extract until smooth and fluffy. Gently fold in the cooled egg mixture.
  4. Dip each ladyfinger into the cooled coffee, one at a time and arrange in a single layer in an 8×8 inch baking dish.
  5. Spoon half the berry mixture over the ladyfingers. Then spoon half the mascarpone mixture over the berries. Repeat with another layer of ladyfingers, berries, and mascarpone mixture.
  6. Cover and chill in the refrigerator for at least 6 hours or overnight.
  7. When ready to serve, dust the top of the tiramisu with cocoa powder.
