Wild Berry Tiramisu Recipe
Ingredients:
- 1 cup blackberries, fresh or frozen
- 1 cup raspberries, fresh or frozen
- 1 cup strawberries, fresh or frozen
- 1/2 cup sugar
- 1/4 cup water
- 3 egg yolks
- 1/2 cup sugar
- 1/4 cup water
- 8 oz mascarpone cheese, room temperature
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 24 ladyfingers
- 1/2 cup strong coffee, cooled
- 1/4 cup cocoa powder, for dusting
Instructions:
- In a medium saucepan, combine the blackberries, raspberries, strawberries, 1/2 cup sugar, and 1/4 cup water. Cook over medium heat until the berries are softened and the mixture is thickened, about 15 minutes. Remove from heat and let cool.
- In a bowl, whisk together the egg yolks and 1/2 cup sugar until thick and pale. In another small saucepan, heat 1/4 cup water until it comes to a simmer. Gradually whisk the hot water into the egg mixture until fully combined. Place the bowl over a small saucepan of simmering water and whisk constantly until the mixture becomes thick and light, about 5-7 minutes. Remove from heat and let cool.
- In a large bowl, beat together the mascarpone cheese, heavy cream, and vanilla extract until smooth and fluffy. Gently fold in the cooled egg mixture.
- Dip each ladyfinger into the cooled coffee, one at a time and arrange in a single layer in an 8×8 inch baking dish.
- Spoon half the berry mixture over the ladyfingers. Then spoon half the mascarpone mixture over the berries. Repeat with another layer of ladyfingers, berries, and mascarpone mixture.
- Cover and chill in the refrigerator for at least 6 hours or overnight.
- When ready to serve, dust the top of the tiramisu with cocoa powder.
