Winter Fruits, Lime-Apricot Vanilla Juice Recipe

Ingredients:

  • 2 apricots
  • 2 oranges
  • 1 Meyer lemon
  • 2 limes
  • 1 vanilla bean (or 1 tsp vanilla extract)
  • 1 tsp honey (optional)
  • 2 cups cold water

Instructions:

  1. Cut the apricots in half and remove the pits. Peel the oranges and lemon, removing the white pith.
  2. Juice the apricots, oranges, lemon and limes with a juicer or blender.
  3. Slice the vanilla bean pod lengthwise and scrape out the seeds.
  4. Add the vanilla seeds to the juice mixture and stir well.
  5. If desired, add a teaspoon of honey to sweeten the juice.
  6. Add the cold water and stir until well combined.
  7. Refrigerate the juice for about an hour before serving.

Serving Suggestions:

Serve this refreshing juice chilled with a few ice cubes and garnish with a slice of lime or fresh mint leaves. This juice is perfect for breakfast or as a midday refreshment. It’s also great for entertaining guests during the winter season.
