Yam Woon Sen

Yam Woon Sen is a delicious Thai salad that is refreshing, light and full of flavor. Made with glass or cellophane noodles, this salad is perfect for a hot summer day.

Ingredients:

  • 3 oz glass or cellophane noodles
  • 1/2 cup chopped chicken or shrimp
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 tablespoon chopped green onion
  • 2 tablespoon fish sauce
  • 2 tablespoon lime juice
  • 1 teaspoon sugar
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped roasted peanuts

Instructions:

  1. Cook the glass or cellophane noodles according to package instructions. Drain and rinse with cold water to stop the cooking process.
  2. In a mixing bowl, combine the cooked noodles, chopped chicken or shrimp, red onion, cilantro, and green onion. Toss to mix well.
  3. In a small bowl, whisk together the fish sauce, lime juice, sugar, and red pepper flakes until the sugar is dissolved. Pour the dressing over the noodle mixture and toss until everything is well-coated.
  4. Sprinkle the chopped roasted peanuts over the top of the salad before serving.
