Yule Log “The Candy Box”

Ingredients:

  • 4 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons heavy cream
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 1 1/2 cups powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons whole milk
  • 1/4 teaspoon vanilla extract
  • 3/4 cup mini candy canes, crushed (for garnish)

Instructions:

  1. Preheat the oven to 350°F (180°C). Line a 10×15 inch (25×38 cm) rimmed baking sheet with parchment paper.
  2. In a large bowl, beat the egg yolks with the granulated sugar and vanilla extract until thick and creamy. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. Add the dry ingredients to the egg yolks and mix until just combined.
  3. In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture, being careful not to overmix.
  4. Spread the batter evenly onto the prepared baking sheet. Bake for 12-15 minutes, or until the cake springs back when touched lightly with your finger.
  5. Remove the cake from the oven, loosen the edges with a knife, and invert onto a clean kitchen towel. Remove the parchment paper. Starting at the short end, roll up the cake with the towel. Let cool completely.
  6. In a large bowl, beat the powdered sugar, softened butter, heavy cream, vanilla extract, peppermint extract, and salt together until smooth and creamy.
  7. Unroll the cooled cake and spread the peppermint filling evenly over the surface, leaving a small border around the edges.
  8. Roll up the cake again, this time without the towel. Trim the ends and transfer the log to a serving tray.
  9. In a small bowl, whisk together 1 1/2 cups powdered sugar, softened butter, whole milk, and vanilla extract until smooth.
  10. Spoon the frosting over the top of the cake, spreading it evenly with a knife or offset spatula. Sprinkle crushed candy canes over the frosting and serve.
