Yule Log “The Candy Box”
Ingredients:
- 4 large eggs, separated
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 tablespoons heavy cream
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon peppermint extract
- 1/4 teaspoon salt
- 1 1/2 cups powdered sugar
- 2 tablespoons unsalted butter, softened
- 2 tablespoons whole milk
- 1/4 teaspoon vanilla extract
- 3/4 cup mini candy canes, crushed (for garnish)
Instructions:
- Preheat the oven to 350°F (180°C). Line a 10×15 inch (25×38 cm) rimmed baking sheet with parchment paper.
- In a large bowl, beat the egg yolks with the granulated sugar and vanilla extract until thick and creamy. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. Add the dry ingredients to the egg yolks and mix until just combined.
- In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture, being careful not to overmix.
- Spread the batter evenly onto the prepared baking sheet. Bake for 12-15 minutes, or until the cake springs back when touched lightly with your finger.
- Remove the cake from the oven, loosen the edges with a knife, and invert onto a clean kitchen towel. Remove the parchment paper. Starting at the short end, roll up the cake with the towel. Let cool completely.
- In a large bowl, beat the powdered sugar, softened butter, heavy cream, vanilla extract, peppermint extract, and salt together until smooth and creamy.
- Unroll the cooled cake and spread the peppermint filling evenly over the surface, leaving a small border around the edges.
- Roll up the cake again, this time without the towel. Trim the ends and transfer the log to a serving tray.
- In a small bowl, whisk together 1 1/2 cups powdered sugar, softened butter, whole milk, and vanilla extract until smooth.
- Spoon the frosting over the top of the cake, spreading it evenly with a knife or offset spatula. Sprinkle crushed candy canes over the frosting and serve.
