Yule log with vanilla and candied chestnuts

Ingredients:

  • 4 eggs
  • 100g sugar
  • 60g flour
  • 40g cocoa powder
  • 1 tsp vanilla extract
  • 250g mascarpone cheese
  • 50g icing sugar
  • 250g candied chestnuts
  • 50g unsalted butter

Directions:

  1. Preheat your oven to 180°C.
  2. Beat the eggs and sugar together until it’s light and frothy. Sift the flour and cocoa powder into the mixture, then fold it in carefully. Add vanilla extract and mix well.
  3. Pour the batter into a greased rectangular pan. Bake it in the oven for about 12-15 minutes, or until the cake springs back when you press it gently.
  4. Take another large sheet of parchment paper and place it over the cake, trimming the excess so it fits the size of the cake. Roll up the cake with the parchment paper and let it cool down for 30 minutes.
  5. Mix the mascarpone cheese and icing sugar together until it is smooth.
  6. Cut the candied chestnuts into small pieces and fold them into the mascarpone mixture.
  7. Unroll the cake and spread the mascarpone mixture over it.
  8. Roll the cake back up tightly. Place it in the fridge and let it cool for at least an hour.
  9. Melt the unsalted butter in a pan over low heat. Brush the entire cake with it to finish.
  10. Slice the cake into serving portions and serve!
